Favorite Fall Pumpkin Recipes

It is this time of the year! This magical season! I am a real fall lover as you maybe already know. One of the many reasons why I adore so much this captivating season is her majesty the pumpkin. This is also the time when you can easily get flu and the pumpkin can be your best friend and cure you of many seasonal conditions. So be prepared to enjoy the fall season as much as you can by adding some pumpkin recipes to your daily life!
There are so many amazing benefits. The pumpkin is an excellent source of protein. Pumpkins are also loaded with minerals and vitamins, which are extremely important for your health. There can also be found iron, zinc, and beta-carotene. This magical food can change your life by improving your sleep quality and dental health. With this treasure, you can easily maintain a healthy weight and reduce your stress levels. It takes a significant part in building healthy bones, regulate your blood pressure and boosts heart health. There are also researches, which show anti-cancer properties.
There are many ways to prepare her majesty. You can puree it, blend it, roast it, bake it or add it to many other different meals.
So here are some of my favorite pumpkin recipes, which I continuously prepare at this time of the year:
- Skinny Fall Pumpkin Coffee
I’m a huge coffee lover as you may already know. Maybe the biggest! So one day I was sitting on the sofa at home, and I decided to make another coffee. When I went to the kitchen counter, I saw a pumpkin, and then I decided to try mixing it with my coffee. I drink Nescafe Dolce Gusto, so I used a capsule to make the coffee, which was something like a latte. So you just have to prepare the coffee of your choice and add some pureed pumpkin and vanilla extract. You can use whatever sweetener you love but try with the healthy options like maple syrup, honey or stevia. On the top, you can sprinkle some cinnamon if you like it and ta-da! Your perfect Skinny Fall Pumpkin Coffee is entirely ready! It is ideal for cozy and warm mornings in the comfort of your home.
- Skinny Fall Pumpkin Oat Muffins
These muffins are just gorgeous! They are the perfect fall sweet treat. I carry them everywhere with me because they are the ideal snack for a busy life. And they are easy to make. So basically everything you have to do is to put some boiled pumpkin, 2 eggs, 100 ml. Yogurt, 100 ml. Non-Fat milk or a coconut milk. Add 150-200g. Oats, 1 tbsp. baking soda, vanilla extract and a sweetener of your choice (chose a healthy one) and you are ready to go. Sometimes I play around with the recipe. I can put a banana, lemon or dark chocolate. Just blend all of the ingredients and put the mix in the cupcake form, which should be covered with coconut oil. Bake them for about 20-30 minutes on 200 degrees.

- Skinny Pumpkin Bread
This recipe is also perfect for busy mamas, who want to eat healthily and make more significant and healthy portions for her family.
Put in the blender some pumpkin puree, 3 eggs,1 tbsp. baking soda, dark chocolate (half chocolate), 6 tbsp. coconut sugar, 20-30g. walnuts, vanilla extract or cocoa, ½ cup yogurt and 1 cup whole wheat pastry flour. After you blend, it put it in a form, covered in a coconut oil. Bake it for around 30-40 minutes at 200 degrees.
