Hello, lovelies! I’ve been away for some time. It was a long and hard period of my life. I was working a few jobs. They were taking all my time and powers. Of course, I started eating unhealthy foods all the time because it is cheaper and faster. You know all the excuses we tend to make when we feel tired and unmotivated.

I decided to quit and only work my full-time job (for now). I had a nice time relaxing and reflecting on my health especially. That’s why I decided to start eating healthy again. And that’s when this recipe for gluten-free blueberry muffins came into my mind.

I wanted to limit the carbs because I am a huge carbs lover and eventually transition to the keto diet (but I will tell you more about my keto journey another time in another post).

This gluten-free blueberry muffin recipe is super simple. You don’t have to be a chef to prepare this sweet treat. All you need is a few products, motivation, and 30 minutes – that’s it. These muffins can be perfect for breakfast or as a snack. I bet your kid will love them.

I love experimenting in the kitchen when I have enough time and inspiration. Especially with muffins and because I love muffins and actually love sweets.

I love blueberries and I think they should be more present in our diet. They are low in carbohydrates and very useful. Some of their main benefits are: low calorie but high in nutrients, they are the kings of antioxidant foods, reduce DNA damage, which can help protect against aging and cancer, protect your blood cholesterol from damage.

Of course, we can still talk a lot about the benefits of blueberries and why they should be present in our diet, but we will do it another time, and now we will move directly to the recipe.


For this recipe you will need:

  • Gluten-free flour about 100g.
  • Blueberries (as much as you want to)
  • 2 eggs
  • Baking powder
  • Cinnamon
  • Greek yogurt 3 tbsp.
  • Almond milk
  • Erythritol 3 tbsp.


All you need is to mix everything and blend it. I use BOSH blender and use it for ages and I love it. It makes everything perfect. So if you are thinking to buy a new blender for yourself definitely consider this one. I use it daily for everything you can imagine.

After mixing all the ingredients in the blender I put the mixture in silicone muffin forms. I used all kinds of forms before but I fell in love with these forms. They make the end process so much easier. You will feel the difference.

Put them in the oven on 200 for 15 -20 minutes. And you are ready with your gorgeous gluten-free muffins. Let them cool and enjoy them for breakfast or as a snack.
